Abstract :
Orange fruit is the best source of vitamin C. Citrus fruits and juices are beneficial to health because of its nutritive properties and rich in Vitamin C, minerals and good source of fiber. Present study used to make comparison between two types of lemon and orange fruits concentrated juice extract. We found that there was a proper correlation between pH, acidity, vitamin C and conductivity values obtained in all samples. The pH value of samples got 2.43 - 4.15, titrable acidity equivalent to citric acid i.e. 19 and 1.98 g/100 ml and vitamin C value was found to be 1.98 & 2.24 g/100 ml of samples. Conductivity of orange and lemon samples found to be 2.831 & 2.628 MS/cm. % ash was found in 6.08 – 11.6 %, crude fiber 0.418 -1.07 g/100ml, potassium 113 – 176 mg/100ml, sodium 43 -56 mg/100ml, calcium 2.16 - 6.32 mg/100ml, mg 5.2 - 10.67 mg/100ml while iron was found 0.119 - 2.009 mg/100ml. Based on the result obtained in research shows that, both lemon samples were high amount of vitamin C, crude fiber value, conductivity, calcium and iron value. While other parameters are more or less close to each other in all samples of lemon and oranges.
